Ingredients
- 1 stick of butter, room temperature
- 1 cup of sugar
- 1 teaspoon of vanilla extract
- 2 large eggs
- 2 cups of all-purpose flour
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- Juice of 1 lemon, freshly squeezed
- Zest of 2 lemons, freshly grated
Lemon Glaze
- 2 ½ cups of powdered sugar
- Juice of 1 lemon, freshly squeezed
Instructions
- Preheat oven to 350 DEGREES.
- In a large mixing bowl, add butter and sugar. Beat with an electric mixer on medium speed until pale and creamy. Add vanilla and 2 eggs and beat again until combined.
- Sift in flour, baking soda, and salt. Add lemon juice and zest. Beat briefly until soft cookie dough forms.
- For best results, refrigerate dough for 1 hour. Then, scoop cookie dough in with a 1.5 tbsp medium scooper onto a cookie sheet. This dough yields approximately 22 cookies.
- Bake for 15 minutes. Carefully transfer cookies to a wire rack to cool completely.
- To make the lemon glaze, scoop 2 ½ cups of powdered sugar into a mixing bowl. Add lemon juice, one tablespoon at a time, and mix until incorporated. The glaze should be smooth, but thin enough to drizzle. Drizzle glaze over cookies. Leave for 10-15 minutes to set.
