A Tale of Two Naans: Gluten-Free Sweet or Savory?

If you’ve ever thought that gluten-free naan was out of reach, think again. Whether you’re cooking with Bob’s Red Mill gluten free flour or milling whole grains fresh at home, these two homemade gluten-free flatbread recipes prove that flavor, texture, and convenience can coexist—no matter your style.
A couple of weeks ago, I made my first batch of gluten-free naan using Bob’s Red Mill 1-to-1 gluten free flour. It was quick, slightly sweet, and had that tender, mochi-like texture thanks to the rice flour in the blend. Then, I decided to level it up with a heartier version made from fresh milled gluten free grains—specifically millet, sorghum, and brown rice.
The result? Two family-approved, gluten free skillet breads that pair beautifully with everything from Indian curry to a full Greek Feast.
Whether you need an easy gluten free bread recipe for a busy night or want to enjoy the depth of flavor in a whole grain gluten free bread, there’s a naan here for you.
Recipe 1: Sweet & Convenient Gluten-Free Naan
This version is perfect when you’re short on time but still want to enjoy a warm, homemade gluten-free naan. It uses Bob’s Red Mill gluten free flour, coconut oil, and a touch of sugar for a mildly sweet finish that my kids loved.
Highlights:
- Slightly sweet
- Tender, mochi-like texture
- Pantry-friendly ingredients
- Great for snacking or dipping in soup

- 4 tsp cane sugar
- ⅓ cup plain Greek yogurt
- 3 tbsp melted butter
- 1 egg
- ¾ cup warm water
- Coconut oil for frying
Instructions
- Mix dry ingredients in a large bowl.
- In a separate bowl, whisk together wet ingredients.
- Combine wet and dry to form a soft dough.
- Divide into 8 pieces and flatten into discs.
- Fry each piece in coconut oil for 2–3 minutes per side.
- Serve warm and enjoy!
Recipe 2: Fresh Milled, Hearty Gluten-Free Naan
This millet flour naan combines nutrition with flavor. It’s made with fresh milled gluten free flours, including sorghum and brown rice, giving it a more structured bite. With a lower sugar content and a mix of coconut and avocado oil, it’s a great option for savory meals.
Highlights:
- Savory and hearty
- Whole grain gluten free bread texture
- Nutrient-dense flours: millet, sorghum, and brown rice
- Clean ingredients and fresh milled flavor

Ingredients
- 1 ¼ cups fresh milled millet flour
- ¾ cup fresh milled sorghum flour
- ½ cup fresh milled brown rice flour
- ½ tsp sea salt
- 1 tsp xanthan gum
- ¼ cup tapioca starch
- ¼ tsp cream of tartar
- 2 tsp cane sugar
- ⅓ cup plain Greek yogurt
- 3 tbsp melted butter
- 1 egg
- ¾ cup warm water (adjust as needed)
- Equal mix of coconut oil and avocado oil, for frying
- Extra millet flour for dusting
Instructions
- Mix all dry ingredients in a large bowl.
- In a separate bowl, whisk together yogurt, butter, egg, and water.
- Stir wet mixture into dry until a soft dough forms.
- Divide into 8 portions and flatten into discs, using millet flour for dusting if needed.
- Fry in a mix of avocado and coconut oil for 2–3 minutes per side.
- Serve warm and enjoy!
This version isn’t as sweet, which made it a better match for our Greek Feast. It held up well to bold flavors like lamb, olives, and herbed yogurt sauces, and the whole grains added satisfying texture and depth.
