No Water? No Problem: Wholesome Chicken & Rice for When the Water Runs Dry

We were recently without running water for the entire day. Unfortunately, this isn’t a new experience for us. Over the years, we’ve dealt with water outages due to hurricanes, neighborhood main line breaks, construction mishaps, and even the occasional burst pipe. We’ve also been under more than a few boil water advisories.

Because of that, we’ve learned the value of being prepared. We always keep filtered and bottled water on hand, along with other essential liquids. Our pantry, freezer, and paper goods are stocked and ready—just in case. Everyone should take simple steps like these! A little preparation meant we were able to put together a wholesome, filling meal—without needing to use any running water.

Since we had cooked, canned chicken in the pantry, we didn’t have to worry about handling raw meat or cleaning up contaminated surfaces—an extra bonus when you can’t just turn on the tap. For this simple one-pot meal, the chicken stock served as the primary liquid and packed in plenty of flavor.

One-Pot Creamy Chicken & Rice (No Water Needed)

Ingredients:

  • 2 cups uncooked white rice
  • 2 (12-ounce) cans cooked chicken breast
  • 2 cups broccoli florets (or florets from 1 head of broccoli)
  • 1 packet Simply Organic gravy mix
  • 1 cup plain Greek yogurt
  • 4 tablespoons homemade ranch seasoning
  • 1 cup shredded cheddar cheese
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 pinch red pepper flakes
  • 1 (32-ounce) carton organic chicken broth
  • 2 tablespoons butter

Instructions:

  1. In a large stock pot or Dutch oven, bring the chicken broth, salt, pepper, red pepper flakes, and butter to a boil. Whisk in the gravy mix until smooth.
  2. Once boiling, add the uncooked rice, canned chicken (with liquid if desired), broccoli, Greek yogurt, cheddar cheese, and ranch seasoning. Stir to combine well.
  3. Return to a boil if the temperature drops, then cover the pot with a lid.
  4. Reduce heat to low and simmer for 30 minutes, or until the rice is tender and most of the liquid is absorbed.
  5. Turn off the heat, stir to fluff the rice, and serve warm.

This hearty, no-fuss recipe came together with ingredients we already had on hand. It’s a great reminder that emergency preparedness doesn’t have to be complicated—and you don’t have to sacrifice nutrition or flavor when challenges arise.
