Ingredients:
- 3 ripe bananas, mashed
- 1/3 cup plain Greek yogurt
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup chopped walnuts
- 1/2 cup skinny-dipped chocolate chips (dark chocolate or sugar-free)
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a standard loaf pan or line it with parchment paper.
- Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, Greek yogurt, honey or maple syrup, melted coconut oil, eggs, and vanilla extract. Mix until well combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and ground cinnamon.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.
- Fold in Walnuts and Chocolate Chips: Gently fold in the chopped walnuts and skinny-dipped chocolate chips until evenly distributed throughout the batter.
- Pour into Pan: Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake: Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean. Keep an eye on it to prevent over-baking.
- Cool: Allow the banana walnut bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Slice and Enjoy: Once cooled, slice the bread into portions and enjoy a delicious, healthier version of banana walnut bread with skinny-dipped chocolate chips.
